Cajun Squash Casserole

 
Ingredients -
1/2 stick Butter
4 Yellow Squash, thinly sliced
4 medium Tomatoes, cut in pieces
1/2 Green Bell Pepper, chopped
1 large White or Yellow Onion, thinly sliced

White Sauce:
4 tablespoons melted Butter
4 tablespoons All-Purpose Flour
1 cup Milk
dash of Tabasco Sauce
Cajun Seasoning
1/2 cup grated Fresh Parmesan Cheese
 
Preparation:
White Sauce:

Add 4 tablespoons melted butter, all-purpose flour, milk, Tabasco sauce, Cajun seasoning, and fresh Parmesan to small bowl.

Casserole:

1. Heat butter in large non-stick oven-safe skillet.

2. Add squash, tomatoes, onions, and peppers to skillet in 3 layers.

3. Season each layer with Cajun seasoning.

4. Cover and simmer over medium heat 10 minutes. Drain juice off and reserve for soup stock, if desired.

5. Pour white sauce over casserole. Sprinkle with cheese.

6. Bake 20 minutes.
