Chicken and Tortilla Chips Casserole

 
Ingredients -
1 (12 ounces) bag Tortilla Chips
2 Whole Chicken Breasts, cooked, chopped
1 (10-1/2 ounces) can Condensed Chicken and Rice Soup
2 cups Sharp Cheddar Cheese, grated
1 (10 ounces) can Tomatoes and Green Chilies
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Crush the tortilla chips by squeezing the bag evenly to break.

3. Lightly spray a 1 quart casserole dish with non-stick cooking spray.

4. Place one layer of tortilla chips in the bottom of the dish.

5. Sprinkle an even layer of chicken cubes over the tortilla chips.

6. Pour several rounded spoonfuls of the soup/milk mixture over the cubes of chicken.

7. Sprinkle a layer of cheddar cheese over the soup mixture, followed by several spoonfuls of tomato.

8. Repeat the layering process until all of the ingredients have been used.

9. Top the casserole with additional grated cheese if desired.

10. Bake for 25 minutes.

Look for artichokes that are tightly furled and firm to the touch. The stem should be firm and not discolored.
