Chicken Burrito Casserole

 
Ingredients -
1-1/2 pounds Boneless Skinless Chicken Breast Halves
2-1/2 pounds package Frozen Bean and Cheese Burritos, thawed
1 cup Whole Milk
1 (10-3/4 ounces) can Cream of Mushroom Soup
1-1/2 cups shredded Cheddar Cheese
1/2 cup sliced Black Olives
chopped Fresh Cilantro Leaves
 
Preparation:

1. Preheat oven to 350 F.

2. Add chicken to large saucepan and cover with cold water.

3. Bring to a boil or medium high heat, reduce to low and simmer 10 minutes.

4. Remove chicken from liquid and allow to drain and cool.

5. Dice chicken into bite size pieces.

6. Grease a large ceramic baking dish with olive oil.

7. Place burritos in baking dish in single, tight layer.

8. Spoon diced chicken over burritos.

9. Add milk, cream of mushroom soup, 1-cup shredded cheddar cheese, and black olives to bowl. Stir to combine.

10. Spoon mixture evenly over chicken.

11. Top with remaining ½ cup cheese.

12. Bake 30 minutes or until heated through and bubbly.

13. Remove casserole to wire rack. Cool 5 minutes before serving.

14. Garnish with cilantro.

Whole asparagus is excellent served alone or in salads when properly cooked, whether steamed, boiled or grilled.

Preparing Artichokes

To remove the lower outer leaves, start at the bottom, and pull them down and away from the rest. Do this for 2 to 3 rows of leaves. Pare away any loose or rough areas with a sharp knife.
