Mexican Casserole

Sauteed beef and onions layered with corn tortillas, Mexican-style beans and shredded cheese. Baked golden brown.
Ingredients -

1 package Corn Tortillas
2 cans Mexican-style Beans
1 package shredded Cheddar Cheese
1 pound Lean Ground Beef
1 package Taco Seasoning
1 medium Yellow Onion, diced

 
Preparation:

1. Preheat oven to 350 F.

2. Add ground beef and onions to skillet. Brown ground beef and drain drippings.

3. Add taco seasoning and water. Simmer 5 minutes.

4. Layer corn tortillas, meat mixture, beans and cheese.

5. Repeat layering, ending with cheese.

6. Bake 30 minutes.

Lean Ground Beef
For fewer calories and a change of pace, use ground chicken or ground turkey in place of the ground beef.

Taco seasoning packets are available in the same section as other Mexican-style products and sometimes with the dry gravy mixes.
