Pork Chop Casserole

 
Ingredients -
1 (6 ounces) package Long Grain and Wild Rice Mix
2 cups Hot Water
4 (1/2-inch thick) Bone-In Pork Loin Chops, trimmed
1/4 teaspoon Fresh Ground Black Pepper
1 (10 3/4 ounces) can of Condensed Cream of Celery Soup, undiluted
1/2 cup Milk
 
Preparation:

1. Preheat the oven to 350 degrees.

2. Combine the hot water, rice and seasoning packet in a medium bowl and stir thoroughly.

3. Pour the mixture into a 13 x 9 x 2 inch baking dish that has been sprayed with non-stick cooking spray.

4. Set aside.

5. Season the pork chops with salt and pepper.

6. Place the pork chops over the rice mixture.

7. Cover with aluminum foil and cook for 1 hour.

8. Remove the foil.

9. In a small bowl combine the cream of celery soup and milk.

10. Pour the soup mixture over the casserole.

11. Bake the casserole, uncovered for 15 minutes or until heated through.

Steaming Globe Artichokes

Stand prepared artichokes in a covered steamer basket. Steam medium globe artichokes 30 minutes.
