Asparagus Gratin

Fresh trimmed asparagus spears are simmered in water until tender. Prepared asparagus divided into bundles and wrapped in slice of prosciutto. Bundles arranged in baking dish. Asparagus is covered with mixture of unsalted butter and plain bread crumbs and topped with shredded gruyere cheese. Casserole style dish is placed under broiler to melt cheese.

Ingredients -

1 pound Asparagus, tough ends trimmed
6 Slices Prosciutto
3 tablespoons Unsalted Butter
1/2 cup Plain Bread Crumbs
1/2 cup Shredded Gruyere Cheese

 
Preparation:

1. Bring water to a boil in skillet, add the asparagus and simmer for 5 minutes or until they are tender.

2. Drain.

3. Divide the asparagus into 6 bundles.

4. Wrap each with a slice of prosciutto.

5. Place in a shallow baking dish.

6. Melt the butter in the saucepan and add bread crumbs.

7. Toss to coat.

8. Pour over the bundles.

9. Top with the cheese.

10. Broil for 1 minute or until the cheese lightly browns.

Prosciutto

Prosciutto is the Italian word for cured ham. The dry-cured process takes from several months to several years to reach the final product. Prosciutto is often thinly sliced and served uncooked as an appetizer, or used to wrap around other ingredients such as asparagus spears, before baking.

Shredded Gruyere Cheese

Gruyere, is a hard yellow, sweet but slightly salty cheese named after the town of Gruyères in Switzerland. Young gruyere cheese has a nutty taste and creamy texture, while aged gruyere has a stronger, more complex flavor.
