Asian Beef Casserole

Simple, inexpensive asian style beef noodle casserole combines ground beef with Ramen noodles, mixed vegetables, ground ginger and sliced onions.

Ingredients -

1 pound Ground Beef, browned, drained, broken up with wooden spoon
2 (3 ounces) packages Oriental Flavor Ramen Noodles, broken up
2 cups Water
2 cups Frozen Vegetable Mixture
1/4 teaspoon Ground Ginger
2 tablespoons Thinly Sliced Green Onions

 
Preparation:

1. Remove browned ground beef to bowl.

2. Season meat with flavor packet from one package Ramen noodles. Set aside.

3. In same skillet, combine water, frozen vegetable mixture, noodles, ground ginger and second seasoning packet.

4. Bring to a boil and reduce heat to low.

5. Cover. Simmer 3 minutes or until noodles are tender, stirring occasionally.

6. Return ground beef to skillet.

7. Stir in green onions.

Fresh chopped vegetables are a great substitution for the frozen variety called for in this recipe.

Green Onions
Green onions are the immature bulb from yellow onions. The green onion is not pungent like yellow onions and is often chopped and served raw. Store green onions in plastic bags in the vegetable compartment of your refrigerator. They will last several weeks if kept cold.
