Beef And Macaroni Casserole

Macaroni noodles tossed in vegetable oil and arranged in slow cooker. Prepared noodles topped with browned ground beef, coarse salt, fresh ground black pepper, chopped onion, chopped celery, tomato paste, water, dry sherry, and tomato soup. Casserole style dish topped with grated cheese and dried oregano and slow cooked for 4 to 6 hours. Served hot as main or side dish.

Ingredients -
1 package Macaroni, cooked and drained
2 tablespoons Olive or Vegetable Oil
1-1/2 pounds Ground Beef, browned and drained
Coarse Salt
Fresh Ground Black Pepper
1 Large White or Yellow Onion, chopped
2 Celery Stalks, chopped
1 can Tomato Paste
3/4 cup Water
2 tablespoons Sherry
1 can Tomato Soup
Grated Cheddar or Parmesan Cheese
1 teaspoon Leaf Oregano
 
Preparation:

1. Add the noodles and oil to a bowl and toss to coat.

2. Spray a crock pot with nonstick cooking spray.

3. Add the noodles to the crock pot and add the beef, salt, pepper, onion, celery, tomato paste, water, sherry and soup.

4. Sprinkle the cheese and dried oregano on top.

5. Cover and cook on Low 4 to 6 hours.

 


Casserole Making Tips -
Ground Beef

Most of the fat in ground beef burns off and gets drained away when you brown it in a skillet on the stovetop. The process reduces the volume of beef left for use in your recipe. For most casseroles the choice between using a fattier ground beef or a very lean variety will make little difference in the recipe, so the choice is up to you.

Parmigiano-Reggiano

Real Parmesan cheese is labeled Parmigiano-Reggiano. The cheese can be found in most supermarkets or specialty cheese stores. Parmigiano-Reggiano is hard cheese with a strong, nutty flavor and slightly gritty texture. Imitations fall way short of the real cheese.
