Beef and Noodle Casserole

Prepared egg noodles arranged in bottom of baking dish and topped with mixture of sautéed ground beef and garlic, tomato sauce, coarse salt and fresh ground black pepper. Ground beef topped with mixture of sour cream and cream cheese. Chopped green onion and grated fresh cheddar cheese are sprinkled over the top, and the dish is baked until heat through, cheese has melted, and the edges are golden brown.

Ingredients -

2 cups Cooked Egg Noodles
1 pound Ground Beef
1 (15 ounces) Tomato Sauce
1 - 2 Garlic Cloves, minced
Coarse Salt, to taste
Fresh Ground Black Pepper
1 (4 ounces) package Cream Cheese, softened
1 cup Sour Cream
1 cup Grated Fresh Cheddar Cheese
2 Green Onions, chopped

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Layer the noodles into the bottom of a 2 quart casserole baking dish.

3. Brown the ground beef and garlic in a large skillet.

4. Drain and discard the fat.

5. Add the tomato sauce, salt and pepper and simmer for 15 minutes.

6. Pour the mixture over the noodles.

7. Combine the cream cheese with the sour cream in a small bowl and beat with an electric mixer until smooth.

8. Spread the mixture over the top and sprinkle with green onion and cheddar cheese.

9. Bake for 35 minutes.

10. Serve immediately.

Sour Cream

The rich dairy product is cream that has been fermented with lactic acid bacteria. It is not cream that has begun to spoil. The process sours and thickens the cream.

Green Onions

Green onions are the immature shoots of yellow onions that have been harvested before they have a chance to mature and become large, yellow storage onions. Green onions also go by the name spring onion or scallion. Green onions are mild compared to other onions. The ends of green onions should be trimmed.
