Beef Nacho Casserole

Browned and crumbled ground beef combined with chunky salsa, whole kernel corn, mayonnaise, and chile powder. Mixture is transferred into baking dish, spread evenly, topped with crushed tortilla chips and grated Colby cheese. Casserole is baked in hot oven to meld flavors and melt cheese. Serve hot.

Ingredients -

1 pound Ground Beef
1-1/2 cups Medium or Hot Chunky Salsa
1 (10 ounces) can Whole Kernel Corn, drained
3/4 cup Mayonnaise
1 teaspoon Chile Powder
2 cups Crushed Tortilla Chips
2 cups Colby Cheese

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Add the ground beef to a large skillet and brown over medium-high heat, breaking into crumbles.

3. Drain the excess fat and discard.

4. Remove the skillet from the heat and add the next 4 ingredients, stirring well to combine.

5. Layer the mixture into the bottom of a 2 quart casserole baking dish, followed by the chips and cheese.

6. Repeat the layers, ending with the cheese.

7. Bake until the cheese is melted, which takes about 20 minutes.

8. Serve and enjoy.

Colby Cheese

Colby is one of the great cheeses produced in Wisconsin. The cheese, developed in the late 1800’s, is a semi-hard cheese similar to cheddar. Colby is softer, moister, and milder than Cheddar cheese. Colby is readily available in most supermarkets.
