French Onion Beef Casserole

Boneless beef round steak combined with fresh mushrooms, onion slices, French onion soup, herb stuffing mix. Cooked all day on low temperature to tenderize beef. Casserole is finished by topping with shredded Mozzarella cheese.

Ingredients -

1-1/4 pound Boneless Beef Round Steak (1/2-3/4 inch thick, cut into 6 serving size pieces)
1 (8 ounces) package sliced Fresh Mushrooms
1 large Onion, sliced, separated into rings
1 can Condensed French Onion Soup
1 (6 ounces) package Herb Stuffing Mix
1/4 cup Margarine or Butter, melted
4 ounces (1 cup) shredded Mozzarella Cheese

 
Preparation:

1. Add ½ beef, mushrooms, and onions to crock pot. Repeat layering.

2. Pour French onion soup over beef, mushrooms and onions.

3. Cover and cook on low 8–10 hours.

4. In large bowl, combine herb stuffing mix, contents of seasoning packet, melted margarine and ½ cup liquid from crock pot. Toss to mix.

5. Place stuffing on top of contents in crock pot.

6. Increase heat to high setting.

7. Cover and cook 10 minutes.

8. Sprinkle with cheese. Cover and cook until cheese is melted.

Substitute another cut of beef for the round steak, if desired, The slow cooking process will tenderize most less expensive cuts of beef, making it ideal to use flank, shank or another tougher meat.
