Breakfast Casserole

Southern-style hash brown potatoes, crisp bacon pieces, browned and crumbled sausage, diced white onion, diced green bell pepper, and grated cheddar cheese layered in slow cooker. Mixture of eggs, whole milk, dry mustard, coarse salt, and fresh ground black pepper is poured over layers of meats and vegetables and casserole style dish is slow cooked for 11 hours. This is a great dish to start at night and serve the next morning.

Ingredients -
1 (32 ounces) bag Frozen Southern Style Hash Brown Potatoes
1 pound Bacon cut into pieces, fried and drained
1 pound Sausage, crumbled, browned and drained
1/2 cup Diced White or Yellow Onions
1 Green Bell Pepper, diced
3/4 pound Cheddar Cheese, diced
1 Dozen Eggs
1 cup Milk
1/2 teaspoon Dry Mustard
Coarse Salt
Fresh Ground Black Pepper
 
Preparation:

1. Layer the ingredients in the order listed into the crock pot, finishing with the cheese.

2. In a small bowl, whisk together the eggs, milk, mustard, salt and pepper.

3. Pour the egg mixture into the crock pot.

4. Cook for 11 hours on Low.

5. Serve and enjoy.

Southern Style Hash Brown Potatoes

Southern style hash brown potatoes refer to the cut of the potato. Potatoes are peeled and the dice is very small. The potatoes crisp up very well when sautéed. This style of hash brown can easily be made at home. The small potato pieces can be boiled for 5 to 10 minutes and drained to remove some of the starch from the potatoes, allowing them to brown easier.
