Breakfast Sausage and Egg Casserole

Mixture of shredded potatoes and melted butter arranged in bottom of prepared baking dish. Cooked and crumbled breakfast sausage, shredded mild cheddar cheese, shredded white onion, small curd cottage cheese, and eggs stirred together and poured over potatoes. Casserole is baked in hot oven until eggs are set and cheese has melted. Served hot.

Ingredients -

1 pound Sage Flavored Breakfast Sausage
3 cups Shredded Potatoes, drained and pressed
1/4 cup Butter, melted
12 ounces Mild Cheddar Cheese, shredded
1/2 cup White Onion, shredded
1 (16 ounce) container Small Curd Cottage Cheese
6 Jumbo Eggs

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Spray a 13 x 9 inch square baking dish with nonstick cooking spray.

3. Brown and crumble the sausage in a large deep skillet over medium heat.

4. Drain and set aside.

5. Combine the butter and shredded potatoes.

6. Line the bottom and the sides of the prepared dish with the potato mixture.

7. Combine the sausage, cheddar cheese, onion, cottage cheese, and eggs in a bowl and mix well.

8. Pour the mixture over the shredded potatoes.

9. Bake for 1 hour, or until a toothpick inserted into center of the casserole comes out clean.

10. Let cool for 5 minutes before serving.
