Christmas Brunch Casserole

Hash brown potatoes arranged in bottom of prepared baking dish, and seasoned with coarse salt, fresh ground black pepper, and garlic salt. Potatoes are topped with sautéed mushrooms and onions, crisp bacon pieces. Mixture of eggs, whole milk and dried parsley poured over casserole, dish is topped with plastic wrap, refrigerated overnight and baked the following day.

Ingredients -

1 pound Bacon
1 tablespoon Butter or Margarine
2 White Onions, chopped
2 cups Fresh Sliced Mushrooms
4 cups Frozen Hash Brown Potatoes, thawed
1 teaspoon Coarse Salt
1/4 teaspoon Garlic Salt
1/2 teaspoon Fresh Ground Black Pepper
4 Large Eggs
1-1/2 cups Milk
1 pinch Dried Parsley
1 cup Shredded Cheddar Cheese

 
Preparation:

1. Turn the oven to 400 degrees and preheat.

2. Spray a 13 x 9 inch casserole dish with nonstick cooking spray.

3. Cook, crisp and crumble the bacon in a large deep skillet.

4. Drain and discard the grease.

5. Sauté the mushrooms and onions in butter in a separate skillet until tender.

6. Layer the potatoes in the bottom of the prepared casserole dish and sprinkle with salt, pepper and garlic salt.

7. Top with bacon, then onions and mushrooms.

8. Whisk together the eggs, milk and parsley in a large bowl.

9. Pour the mixture over the casserole.

10. Top with the grated cheese.

11. Cover with plastic wrap and chill overnight.

12. Bake for 1 hour.
