Potato Bacon Casserole

Boiled potatoes combined with coarse salt, fresh ground black pepper, and milk. Mixture is beaten until fluffy. Whipped potatoes are combined with grated sharp cheddar cheese, eggs, sautéed chopped green bell pepper and chopped white onion, and crisply cooked bacon pieces. Egg mixture transferred large prepared baking dish and baked in oven until eggs have set and cheese has melted.

Ingredients -

6 Medium Potatoes
1 teaspoon Salt
1/8 teaspoon Pepper
3 tablespoons Butter
1/8 cup Hot Milk
1/3 cup Chopped White Onion
1/3 cup Chopped Green Pepper
4 Bacon Strips
2 Large Eggs
1/2 cup Grated Sharp Cheddar Cheese

 
Preparation:

1. Preheat the oven to 350 degrees.

2. Add the potatoes to a pot of salted water and cook until fork tender.

3. Add the bacon to a large skillet and fry until crisp.

4. Cut the bacon into small pieces.

5. Drain and discard the grease, reserving 2 tablespoons.

6. Cook the green pepper and onion in the same skillet with the reserved bacon grease.

7. Add the potatoes, salt, pepper, butter and milk to a large bowl and beat with an electric mixer on low speed until fluffy.

8. Add the cheese, eggs, onion, green pepper and bacon and beat until well combined.

9. Spray a 13 x 9 casserole baking dish with nonstick cooking spray.

10. Transfer the mixture to the prepared dish.

11. Bake for 35 minutes.
