Western Breakfast Casserole

Egg yolks combined with all-purpose flour, sour cream, shredded cheddar cheese, shred jalapeno cheddar, chopped cooked ham, chopped red bell pepper, diced green chilies and fajita seasoning. Egg whites are beaten stiff and entire mixture is transferred into prepared baking dish. Casserole is baked until eggs have set and cheese has melted. Individual servings garnished with diced red bell pepper.

Ingredients -

8 Large Eggs, separated
1/2 cup All-Purpose Flour
2-1/4 cups Sour Cream
1/2 pound Shredded Cheddar Cheese
1/2 pound Shredded Jalapeno Cheese
1 cup Chopped Cooked Ham
1 Medium Red Bell Pepper, seeded, chopped
4 ounces can Diced Green Chilies, drained
1 teaspoon Fajita Seasoning
Diced Red Bell Pepper, for garnish (optional)

 
Preparation:

1. Turn the oven to 325 degrees and preheat.

2. Spray a 13 x 9-inch glass baking dish with nonstick cooking spray.

3. In a bowl, combine the flour and egg yolks and whisk well to combine.

4. Add the next 7 ingredients and mix well.

5. In another bowl, beat the egg whites until stiff peaks form.

6. Fold the egg whites into the first bowl.

7. Transfer the mixture to the prepared baking dish.

8. Bake for 50 minutes or until the egg is set and begins to turn golden brown.

9. Garnish with diced red bell pepper.
