Broccoli Casserole

Broccoli florets are prepared and tossed in mixture of cream of mushroom soup, real mayonnaise, grated sharp cheddar cheese, minced white onion, milk and fresh ground black pepper. Broccoli mixture transferred to prepared baking dish, topped with crushed Ritz crackers and dots of butter. Casserole baked until crust is golden brown and broccoli is cooked through.

Ingredients -

2 Heads Broccoli, cut into florets, hard stems removed
2 cans Cream of Mushroom Soup
2 cups Real Mayonnaise
2 cups Grated Sharp Cheddar Cheese
1 Small Onion, very finely minced
1 splash Whole Milk
Fresh Ground Black Pepper

Topping:
1 Sleeve Ritz Crackers
Butter

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Clean the broccoli and add to a pot, cover with water and simmer until crisp tender.

3. Drain the broccoli and set to the side.

4. In a large bowl, combine the mayonnaise, soup, onion, cheese, milk and pepper and mix well.

5. Add the cooked broccoli and toss well to coat.

6. Butter a large casserole dish.

7. Pour the mixture into the prepared dish.

8. Crush the crackers and pour over the casserole.

9. Dot with butter.

10. Bake until golden brown, which takes about 1 hour.
