Broccoli Cauliflower Casserole

Steamed cauliflower and broccoli layered in prepared baking dish with mixture of eggs, coarsely chopped onion, real mayonnaise, condensed cream of mushroom soup, and shredded sharp cheddar cheese. Casserole topped with prepared chicken flavored stuffing mix and dots of unsalted butter. Dish is baked in preheated oven until top crust is golden brown and vegetables have softened.

Ingredients -

1 Head Cauliflower, cut into florets
1 Head Broccoli, cut into florets
2 Large Eggs
1 Large Onion, peeled and coarsely chopped
1 (10-3/4 ounces) can Condensed Cream of Mushroom Soup
1/2 cup Mayonnaise
2 cups Shredded Sharp Cheddar Cheese
1 (6 ounces) box Chicken Flavored Stuffing Mix
4 tablespoons Unsalted Butter

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Steam the cauliflower in a large pot for 8 minutes, adding the broccoli after 3 minutes.

3. Drain and set aside.

4. Combine the eggs, onion, mayonnaise and soup in a food processor and process until smooth.

5. Spread the cauliflower evenly in the bottom of a 13 x 9 baking dish.

6. Sprinkle the top with half the cheese and half of the egg mixture.

7. Repeat with the broccoli and the remaining cheese and egg mixture.

8. Prepare the chicken stuffing according to the directions on the package.

9. Spoon the stuffing over the top of the casserole. Dot with butter.

10. Bake for 45 minutes.
