Broccoli, Ham and Cheese Strata

Sautéed onion and broccoli tossed with Italian bread cubes, chopped deli ham, and mixture of eggs, 2% milk, chopped fresh chives, Dijon mustard, coarse salt, and fresh ground black pepper. Egg mixture is transferred to prepared baking dish and topped with cheddar cheese. Dish is baked in hot oven to set eggs and melt cheese.

Ingredients -

1/4 teaspoon Fresh Ground Black Pepper
1 tablespoon Dijon Mustard
1-1/2 cups 2% Milk
1/2 pound Sliced Low Sodium Deli Ham, chopped
1 (1 pound) bag Frozen Chopped Broccoli, thawed
1 tablespoon Oil
1-1/2 cups Shredded Cheddar Cheese
1/2 teaspoon Coarse Salt
2 tablespoons Chopped Fresh Chives
6 Large Eggs
1 Loaf Italian Bread, cut into cubes
1 Medium White or Yellow Onion, diced

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. Spray a 2 quart casserole baking dish with nonstick cooking spray.

3. Add the oil to a skillet and heat.

4. Add the onion and sauté for 5 minutes.

5. Add the chopped broccoli and sauté for another 3 minutes.

6. Add the bread cubes to a bowl along with the broccoli mixture and the chopped ham.

7. Whisk together the eggs, milk, chives, mustard, salt and pepper in a bowl.

8. Pour the egg mixture over the bread cubes and stir well to combine.

9. Transfer the mixture into the prepared baking dish.

10. Sprinkle the shredded cheese on top.

11. Bake the dish until the internal temperature reaches 160 degrees, which takes about 45 minutes.
