Zesty Broccoli Casserole

Prepared broccoli florets tossed in mixture of egg, cream of mushroom soup, shredded cheddar cheese, horseradish, and real mayonnaise. Mixture is poured into prepared baking dish and topped with cracker crumbs and melted shortening. Casserole is baked in preheated oven until broccoli is cooked through, eggs are set, and cheese is melted.

Ingredients -

2 (10 ounces) packages Frozen Chopped Broccoli
1 can Cream of Mushroom Soup
1-1/2 cups Shredded Cheddar Cheese
1 Egg, beaten
1/4 cup Milk
1/4 cup Mayonnaise
1 tablespoon Horseradish
2 tablespoons Melted Shortening
1/4 cup Cracker Crumbs

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Steam the broccoli as per the directions, then drain.

3. Whisk together the egg, soup, milk, cheese, horseradish and mayonnaise and stir into the steamed broccoli.

4. Grease a 2 quart casserole baking dish with butter.

5. Transfer the broccoli mixture into the prepared dish.

6. Mix together the cracker crumbs and shortening and sprinkle evenly over the broccoli mixture.

7. Bake for 45 minutes, serve and enjoy.
