Chicken and Tortilla Chips Casserole

Crushed tortilla chips topped with cooked chicken breast. Chicken topped with layers of condensed chicken and rice soup, grated sharp cheddar cheese, and tomatoes with green chili pepper. Casserole is baked in hot oven and garnished with additional cheese, if desired.

Ingredients -

1 (12 ounces) bag Tortilla Chips
2 Whole Chicken Breasts, cooked, chopped
1 (10-1/2 ounces) can Condensed Chicken and Rice Soup mixed with 1/2 cup Milk
2 cups Sharp Cheddar Cheese, grated
1 (10 ounces) can Tomatoes and Green Chilies
1 Avocado, peeled, pitted and sliced

 
Preparation:

1. Preheat the oven to 350 degrees.

2. Crush the tortilla chips by squeezing the bag evenly to break.

3. Lightly spray a 1 quart casserole dish with non-stick cooking spray.

4. Place one layer of tortilla chips in the bottom of the dish.

5. Sprinkle an even layer of chicken cubes over the tortilla chips.

6. 6. Pour several rounded spoonfuls of the soup over the cubes of chicken.

7. Sprinkle a layer of cheddar cheese over the soup mixture, followed by several spoonfuls of tomato.

8. Repeat the layering process until all of the ingredients have been used.

9. Top the casserole with additional grated cheese if desired.

10. Bake for 25 minutes. Top with avocado slices.
