Chicken Fiesta Casserole

Boneless, skinless, chicken breast pieces are sautéed and combined with green pepper and onion, salsa, chicken broth, and quick cooking rice. Casserole topped with Monterrey Jack cheese and baked golden brown.

Ingredients -

1 tablespoon Canola Oil
4 Boneless, Skinless Chicken Breast Halves, cubed
1/2 cup Chopped Green Pepper
1/2 cup Chopped Onion
3 cups Chunky Salsa
1 cup Chicken Broth
1-1/2 cup Quick Cooking Rice
1 cup Shredded Monterrey Jack Cheese

 
Preparation:

1. Heat oil in large skillet over medium high heat.

2. Sauté chicken until browned.

3. Add green pepper and onion to chicken. Sauté until chicken is cooked through and vegetables are crisp tender.

4. Add salsa and chicken broth to skillet. Bring to a boil.

5. Stir in quick cooking rice and mix well

6. Sprinkle cheese over top of dish. Cover and remove from heat.

7. Set aside for 5 minutes for rice to finish cooking.

8. Serve hot.

Monterey Jack cheese is a spicy cheese perfect for this casserole. You could substitute cheddar or a Mexican cheese blend for the Monterey.
