Easy Chicken Casserole

Cooked chicken breast pieces topped with mixture of cream of chicken soup, sour cream, white onion and the cremini mushrooms. Casserole topped with crushed butter crackers and baked until bubbly and golden brown on top.

Ingredients -

4 Boneless, Skinless, Chicken Breast Halves
1 (10.75 ounces) can Condensed Cream of Chicken Soup
1 cup Sour Cream
32 Butter Crackers
1/4 cup White Onion, chopped
1/4 cup Cremini Mushrooms, chopped

 
Preparation:

1. Preheat the oven to 350 degrees.

2. In a large pot, boil the chicken until it is no longer pink in the middle, which takes approximately 20 to 30 minutes based on the size of the breasts.

3. Chop the chicken into bite size pieces and place in a 9x13 inch baking dish.

4. Combine the cream of chicken soup, sour cream, white onion and the cremini mushrooms.

5. Pour the soup mixture over the chopped chicken.

6. Sprinkle the top with the crushed butter crackers.

7. Cover and bake for 30 minutes.

8. Let sit for 5 minutes and serve.

The cremini mushroom is a small, dark version of the portobello mushroom, and related to the common button mushroom. The cremini is somewhat more intense in flavor with a tougher outer skin.

Cremini mushrooms are most often packed in small containers, occasionally they will be found in bulk for hand selection. Choose mushrooms that look clean, have no or few blemishes, and whose surface has not turned color or hardened.
