Southwest Chicken Casserole

Southwestern style casserole dish is perfect for any occasion. Cooked instant rice, chicken broth, cooked chicken pieces, chopped yellow onion, canned tomatoes, chili powder, cream of chicken soup and sour cream are combined and spread into prepared dish. Casserole is baked, topped with cheese and returned to the oven to melt cheese.

Ingredients -

2 cups Instant Rice, uncooked
2 cups Chicken Broth
1 cup Chicken, cooked, chopped
1 medium Yellow Onion, chopped
1 (10 ounces) can Mild Tomatoes and Green Chilies
1 teaspoon Chili Powder
1 (10 ounces) can Cream of Chicken Soup
1 cup Sour Cream
1 pound Cheddar Cheese, shredded

 
Preparation:

1. Preheat the oven to 350 degrees.

2. Combine the rice, chicken broth, cooked chicken, onion, canned tomatoes, chili powder, cream of chicken soup and sour cream in a large bowl.

3. Mix thoroughly.

4. Pour the mixture into a 9 x 13 baking pan that has been evenly sprayed with non-stick cooking spray.

5. Bake until the dish hot all the way through.

6. Top with the shredded cheese and bake until cheese becomes golden and bubbly.
