Eggs Florentine Casserole

Delicious breakfast-style casserole prepared by combining eggs, reduced-fat cheddar cheese, grated fresh Parmesan cheese, sea salt, ground nutmeg and fresh ground black pepper. Egg and cheese mixture is whisked together and combined with chopped spinach and cooked potatoes. Completed mix is transferred to prepared baking dish, sprinkled with finely chopped Canadian bacon, and baked in hot oven until eggs are set.

Ingredients -

1 Large Potato, diced
12 Large Eggs
1 cup Reduced-Fat Shredded Cheddar Cheese
1/2 cup Grated Fresh Parmesan Cheese
1/2 teaspoon Sea Salt
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Fresh Ground Black Pepper
2 (10 ounces each) packages Frozen Chopped Spinach, thawed and water squeezed out
2 ounces Canadian Bacon, finely chopped

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. In a microwave safe dish, place the potatoes and 1/2 cup water and cover with plastic, venting at corner.

3. Microwave on high for 5 minutes.

4. Drain the potatoes and set aside.

5. Spray a 13 x 9 inch baking dish with nonstick cooking spray.

6. Combine the eggs, cheddar, parmesan, salt, nutmeg and pepper in a large bowl and whisk together.

7. Add the spinach and potato and stir together.

8. Pour the mixture into the prepared dish.

9. Sprinkle the chopped bacon over the top.

10. Bake for 40 minutes or until the center is set.

11. Allow to cool for 5 minutes before serving.
