Greek Egg Casserole

 

Ingredients -

12 Large Eggs, lightly beaten
1 (10 ounces) package Frozen Chopped Spinach, thawed anddrained
1 (8 ounces) package Sliced Fresh Mushrooms
1 (8 ounces) package Feta Cheese, crumbled
1 small White Onion, chopped
1/3 cup Milk
1 teaspoon Sea Salt
1 teaspoon Dried Dill Weed
1 teaspoon Dried Oregano
1/2 teaspoon Fresh Ground Black Pepper
1-1/2 cups Shredded Mozzarella Cheese
2 tablespoons Chopped Fresh Parsley

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. In a large bowl, combine the eggs, spinach, mushrooms, feta, onion, milk, salt, dill, oregano and pepper and mix well.

3. Spray a 13 x 9 inch casserole baking dish with nonstick cooking spray.

4. Transfer the mixture into the prepared dish.

5. Sprinkle the top with the shredded cheese and parsley.

6. Bake for 30 minutes or until almost set.

7. Let stand 10minutes before serving.
