Chicken, Bean, and Cheese Enchilada Casserole

This is a delicious Mexican style casserole. Flour tortillas arranged in baking dish and topped with mixture of shredded cooked chicken, taco seasoning, and salsa. Another layer of tortillas are placed over the chicken mixture and then a layer of refried beans, sour cream and shredded cheddar cheese. A second layer of the chicken and more cheese finish the preparation. Casserole is baked until bubbly and cheese has melted.

Ingredients -

3 cups Shredded Cooked Chicken
1 (1.25 ounces) envelope Taco Seasoning
2 cups Medium or Hot Salsa
9 Flour Tortillas
1 (15.5 ounces) can Refried Beans, warmed
8 ounces Sour Cream
3 cups Shredded Cheddar Cheese

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. In a skillet, combine the taco seasoning, chicken, salsa and 1/2 cup water and simmer for 10 minutes.

3. Spray a 13 x 9 inch casserole baking dish with nonstick cooking spray.

4. Place 3 tortillas in the bottom of the prepared dish, overlapping.

5. Transfer half of the chicken mixture on top of the tortillas.

6. Cover with 3 more tortillas.

7. Layer with beans, then sour cream, then half the cheese.

8. Cover with the remaining 3 tortillas.

9. Top with the remaining chicken mixture, followed by the remaining cheese.

10. Bake until the mixture is bubbly and the cheese is melted, which takes about 30 minutes.
