Enchilada Casserole

Microwave casserole layers corn tortillas with mixture of ground beef, chopped white onion, tomato sauce, water, chile powder and shredded cheddar cheese. Casserole is topped with chopped tomatoes and sour cream.

Ingredients -

1 pound Ground Beef
1/4 cup Chopped White Onions
1 (8 ounces) can Tomato Sauce
1/2 cup Water
2 teaspoons Chile Powder
4 Corn Tortillas
1 cup Shredded Cheddar Cheese
1/2 cup Chopped Tomatoes
1/4 cup Sour Cream

 
Preparation:

1. Add the onions and meat to a large microwavable dish and cook on high for 6 minutes.

2. Drain the meat and add the next 3 ingredients and microwave an additional 9 minutes.

3. Transfer the mixture to a large bowl.

4. Place 1 of the corn tortillas in the same bowl and top with 1/4 cup meat sauce and 1/4 cup cheese.

5. Repeat the same process 3 times.

6. Microwave for 5 minutes, then let sit for an additional 5 minutes.

7. Serve with a dollop of sour cream and a sprinkle of tomatoes.
