Hash Brown and Chicken Casserole

Hash browns and French fried onions mixed and spread evenly into prepared baking dish. Potatoes are topped with American cheese slices, bite-size pieces of chicken and cream of chicken soup. Casserole is partially baked, corn is stirred in, and dish is topped with French fried onions and returned to oven to finish baking.

Ingredients -

3 cups Hash Brown Potatoes
1 (6 ounces) can French-Fried Onions, divided
6 American Cheese Slices
4 Boneless, Skinless Chicken Breasts, cut into bite-sized pieces
1 can Cream of Chicken Soup
3/4 cup Whole Milk
1 (15 ounces) can Whole Kernel Corn

 
Preparation:

1. Turn the oven to 375 degrees and preheat.

2. In a bowl, combine the hash browns and half the onions and stir well.

3. Transfer the mixture to a 13 x 9 inch baking dish.

4. Layer the cheese slices on top followed by the chicken.

5. Combine the soup and milk in a bowl and mix well.

6. Pour the soup mixture over the top of the chicken.

7. Bake until the chicken is cooked through, which takes about 30 to 35 minutes.

8. Pour the can of corn onto the chicken and stir to combine all ingredients.

9. Bake for an additional 20 minutes.

10. Sprinkle the other half of the onions on top and bake an additional 5 minutes.

11. Allow the dish to sit for 5 minutes before serving.
