Chicken Tortilla Casserole

 

Ingredients -

1 (4-1/2 ounces) can Diced Tomatoes
1 can Cream of Chicken Soup
1 small can Diced Green Chiles
2 tablespoons Minute Tapioca
1 White or Yellow Onion, diced
12 Corn Tortillas, diced
Grated Cheese                                                                                                               
3 Boneless, Skinless Chicken Breasts, rinsed, pat dry

 
Preparation:

1. Add the chicken to an oven bag and bake for 1 hour in a 400 degree oven.

2. Allow the chicken to cool then dice into 1/2 inch chunks.

3. Combine the tomatoes, soup, chilies and tapioca in a large bowl.

4. To the crock pot place 1/3 of the diced tortilla, 1/3 diced chicken, 1/3 soup mix, 1/3 diced onion, 1/3 grated cheese, repeat layers.

5. Cover and cook on low for 7 hours.
