Mexican Chicken Casserole

 

Ingredients -

3 cups Shredded Loose-Packed Frozen Potatoes
1 cup Whole Kernel Corn, rinsed and drained
1 cup Diced Cooked Chicken Breast
1/2 cup Medium or Hot Chunky Salsa
1 (10-3/4 ounces) can Cream of Chicken Soup
1 teaspoon Dried Parsley Flakes
1/2 cup Shredded Cheddar Cheese

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray an 8 x 8-inch dish with nonstick cooking spray.

3. Combine the potatoes, corn, chicken, salsa, soup and parsley in a large bowl and mix well.

4. Transfer the mixture to the prepared dish and spread out evenly.

5. Bake for 35 minutes.

6. Sprinkle the shredded cheese evenly on top and bake for an additional 10 minutes.

7. Allow the dish to sit for 5 minutes before serving.
