Mexican Tortilla Casserole

 

Ingredients -

2 pounds Ground Beef
1/2 cup White Onion, chopped
1/2 cup Green Bell Pepper, diced
1 dash of Garlic Powder
2 tablespoons Chili Powder
1 dash of Ground Cumin
Salt and Pepper to taste
1 can Cream of Chicken Soup
1 can Diced Tomatoes with Green Chilies
1 (15ounces) can Pinto Beans with Juice
1 cup Grated Fresh Mild Cheddar Cheese
1 cup Grated Fresh Monterrey Jack Cheese
12 Corn Tortillas, quartered

 
Preparation:

1. Add the ground beef, chili powder, onion, salt and pepper to a large skillet and brown until the beef is no longer pink.

2. Drain the excess fat.

3. Combine the cream of chicken soup, green pepper, tomatoes, cumin and garlic powder to a mixing bowl and mix well.

4. Spray a 13 x 9 inch casserole dish with nonstick cooking spray.

5. Layer 1/3 each of the following into the dish: tortillas, beef mixture, cheddar cheese, soup mixture and Monterrey Jack cheese.

6. Repeat the layers until done.

7. Bake at 350 degrees for one hour.
