Spicy Mexican Casserole with Ground Beef

 

Ingredients -

2 pounds Ground Beef
1 Medium White Onion, chopped
1 Green Pepper, chopped
2 tablespoons Minced Garlic
8 ounces Mild Taco Sauce
10 ounces Mild Enchilada Sauce
2 cups Plain Yogurt
4 ounces Green Chilies, diced
12 Tostado (flat taco) Shells
3 cups Sharp Cheddar Cheese, grated
10 ounces Mild Salsa
2 teaspoons Coarse Salt
2 teaspoons Fresh Ground Black Pepper

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Add the ground beef, onion, green pepper and garlic to a skillet and brown until done.

3. Drain the excess fat.

4. Season with salt and pepper and add the taco and enchilada sauce.

5. In a small saucepan, heat he chilies and yogurt.

6. Add the mixture to the meat and stir well to blend.

7. Line the bottom of a 9 x 12-inch casserole dish with 6 layersof tostado shells, broken in quarters.

8. Add half of the meatmixture, top with the cheese, followed by the salsa.

9. Repeat all layers.

10. Bake for 35 minutes.
