Taco Casserole

Crock pot beef casserole with diced tomatoes, cream of onion soup, taco seasoning mix, tortillas, sour cream, onion and cheddar cheese.

Ingredients -

1-1/2 pounds Ground Beef
1 (14.5 ounces) can Diced Tomatoes with Green Chilies, undrained
1 can Cream of Onion Soup
1 envelope Taco Seasoning Mix
1/4 cup Water
6 Corn or Flour Tortillas, cut in ½ inch strips
1/2 cup Sour Cream
1 cup Shredded Cheddar Cheese
1 Medium Onion, thinly sliced

Preparation:

1. Brown ground beef in skillet. Drain off fat.

2. Add beef, diced tomatoes, cream of onion soup, taco seasoning mix, and water to crock pot.

3. Cover and cook on LOW 4-5 hours.

4. Gently add tortillas near end of cooking time.

5. Spread sour cream over casserole. Sprinkle with cheddar cheese.

6. Cover and let stand 5 minutes.

Diced Tomatoes with Green Chiles
You could use Mexican style diced tomatoes or plain diced tomatoes and some finely diced jalapeno or serrano chili pepper.

Cheddar Cheese
Monterey Jack or a good four cheese Mexican blend are great substitutes for the cheddar.
