Tamale Pie

Sautéed ground beef and onion combined with water, salsa, taco seasoning mix, whole kernel corn, and black olives. Homemade cornbread crust is spooned over filling in casserole dish and baked until bubbly.

Ingredients -

Filling:
1 pound Ground Beef
1 small Red, White or Yellow Onion, chopped
1 (16 ounces) jar Medium Salsa
1/3 cup Water
1 (1.25 ounces) package Taco Seasoning Mix
1 cup Frozen Corn Kernels
1 (2.25 ounces) can Olives, sliced, drained

Crust:
1 cup Yellow Cornmeal
1 (12 ounces) can Evaporated Milk
1 (4 ounces) can Green Chiles, diced
1 cup Cheddar Cheese, shredded
1 teaspoon Sea Salt
Pickled Jalapeno Slices

 
Preparation:

Filling:

1. Brown the beef with the onion until there is no longer any pink in the beef.

2. Drain off the excess fat.

3. Add the water, salsa and seasoning mix to the beef skillet and bring to a boil.

4. Reduce the heat to low and cook for 5 minutes.

5. Add the corn and sliced olives.

Crust:

1. Preheat the oven to 425 degrees.

2. In a saucepan, combine the milk, cornmeal, 1/2 cup cheddar cheese, chilies and salt.

3. Cook the mixture for 7 minutes or until it has thickened.

4. Pour the filling into an ungreased casserole dish.

5. Spread the cornmeal mixture on top of the filling.

6. Bake for 25 minutes.

7. Sprinkle the remaining cheese onto of the tamale casserole.

8. Bake for an additional 10 minutes or until the cheese is melted.

9. Garnish each serving with jalapeno slices (optional).

Onions
White onions are generally stronger than yellow onions and have very little sweetness when cooked. Red onions are sweeter and less pungent then both white and yellow onions but do lose much of their coloring when cooked.

Ground Beef
Ground beef comes in different varieties with fat content ranging from 5% to 30%. The fat holds much of the flavor in ground beef. Depending on how the beef is cooked much of the fat may be cooked off when the fat is heated.
