1. Cook the beef, onions and garlic in a large saucepan over medium heat until the beef is cooked through.
2. Drain the excess liquid.
3. Add the next 8 ingredients and stir well to combine.
4. Simmer for 3 hours, covered, occasionally stirring.
5. Prepare the pasta to al dente, drain, rinse with cold water and drain again.
6. To a bowl, add 1/4 cup Parmesan cheese, egg substitute, salt and pepper and mix well.
7. Spray 2 13 x 9 inch glass baking dishes with nonstick cooking spray.
8. Spread 1 cup of meat sauce into the bottom of the dish.
9. Layer 1/4 of the pasta, 1 cup meat sauce and 1/4 of the cheese mixture.
10. Repeat the layers and top with the remaining sauce.
11. Sprinkle with remaining Parmesan cheese and oregano.
12. Bake for 1 hour, covered, at 350 degrees or until heated through.
