Penne Pasta Casserole

 

Ingredients -

1 pound Lean Ground Beef or Ground Turkey
1 large White Onion, chopped
1 (14.5 ounces) can Diced Tomatoes with Basil, Garlic & Oregano
1 (6 ounces) Tomato Paste
12 ounces Uncooked Penne Pasta, prepare according to packagedirections
3 cups (12 ounces) Shredded Mozzarella Cheese, divided

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Sauté the onion and ground beef in a large skillet until done.v

3. Drain the excess fat.

4. Add 1/2 cup of water, tomato paste and diced tomatoes and stir well.

5. Season with salt and pepper to taste.

6. Spray a 13 x 9 inch casserole baking dish with nonstick cooking spray.

7. Add the pasta and 2 cups of cheese to the skillet and mix well.

8. Transfer the mixture to the prepared baking dish.

9. Top evenly with remaining cheese.

10. Bake uncovered for 25 minutes or until the cheese is melted and the center is heated through.
