Baked Potato Casserole

Boiled and grated potatoes combined with mixture of garlic, cottage, sour cream, sea salt, fresh ground black pepper, and green onion. Mixture is spread evenly into a casserole dish, topped with sharp cheddar cheese and paprika and baked until cheese is golden brown.

Ingredients -

8-10 Medium Baking Potatoes, scrubbed but not peeled
4 Garlic Cloves, peeled
1-1/2 cups Low-Fat Cottage Cheese
1/2 cup Light Sour Cream
1-1/2 teaspoon Sea Salt
1/2 teaspoon Fresh Ground Black Pepper
1 bunch Green Onions, trimmed and sliced
1/2 cup Grated Sharp Cheddar Cheese
1/4 teaspoon Paprika

 
Preparation:

1. Add potatoes and garlic to stockpot or large saucepan. Cover with cold water.

2. Bring water to a boil over medium high heat.

3. Reduce heat to low. Simmer potatoes 15 minutes, or until fork tender.

4. Remove potatoes and allow them to dry and off cool to touch.

5. Preheat oven to 350 F.

6. Peel potatoes. Grate potatoes into large bowl. Set aside.

7. Add garlic and cottage cheese to food processor. Pulse until smooth.

8. Add sour cream, salt and pepper. Pulse until smooth.

9. Add cheese mixture and green onions to grated potatoes. Stir to combine.

10. Spread mixture into 2-quart non-stick baking dish.

11. Top with cheese and paprika.

12. Bake 30-40 minutes or until golden brown.
