Whipped Potato Casserole

 

Ingredients -

5 pounds Baking Potatoes, peeled and quartered
1/2 cup Unsalted Butter
1-1/4 cups Half-and-Half
1 (8 ounces) container Whipped Cream Cheese with Chives
1 teaspoon Garlic Salt
1/4 teaspoon Ground Nutmeg
1 cup Sliced Almonds

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray a 13x9 inch glass baking dish with nonstick cooking spray.

3. Add the potatoes to a large pot of slightly salted water and bring to a boil.

4. Reduce the heat and simmer until tender, which takes about 20 minutes.

5. Drain the pot and mash the potatoes with a masher.

6. Add the half and half, cream cheese, butter, garlic, salt and nutmeg and beat until smooth.

7. Transfer the mixture to the prepared dish and bake for 30 minutes, uncovered.

8. Sprinkle the almonds on top and bake until lightly browned, which takes another 15 minutes.

9. Allow the casserole to stand for 15 minutes before serving.
