Mediterranean Fish Casserole

White potatoes and Italian peppers layered on bottom of casserole dish. Vegetables are seasoned with coarse salt and fresh ground black pepper and baked until potatoes are tender. Potatoes topped with chopped garlic, halibut fillets, chopped Kalamata olives, plum tomatoes, fresh lemon juice and extra-virgin olive oil. Casserole is garnished with fresh parsley and baked until golden brown.

Ingredients -

2 tablespoons Extra Virgin Olive Oil
1 pound Small White Potatoes, cut into quarters
2 large Italian Frying Peppers, thinly sliced
1/4 teaspoon Kosher Salt
1/4 teaspoon Fresh Ground Black Pepper
3 Cloves Garlic, chopped
4 Halibut Fish Fillets
1/4 cup Kalamata Olives, chopped
2 Plum Tomatoes, seeded and cut into wedges
2 tablespoons Fresh Lemon Juice
1/4 cup Flat Leaf Parsley, chopped

 
Preparation:

1. Preheat the oven to 400 degrees.

2. Grease an oval 2 quart casserole dish with 1 tablespoon olive oil.

3. Spread the potatoes and peppers evenly over the bottom of the dish.

4. Season with 1/8 teaspoon each kosher salt and fresh ground black pepper.

5. Bake for 35 minutes or until the potatoes are tender.

6. Scatter the chopped garlic over the potatoes and peppers.

7. Season the fish with the remaining salt and pepper and place on top of the potatoes.

8. Distribute the olives and tomatoes over the casserole.

9. Drizzle with lemon juice and the remaining oil.

10. Sprinkle with parsley.

11. Bake for 25 minutes or until fish flakes easily.

Garlic
Cut off a bit of each end of the garlic clove and discard before mincing, crushing, chopping or slicing. If you place the clove on its side, you can easily remove the skin by placing the flat edge of a very large knife over the clove and smacking the knife blade with the heel of your hand.
