Squash Casserole

Squash originated in the Americas and has been enjoyed for centuries around the globe. There are many varieties of squash including yellow, butternut and spaghetti squash. Although each has its own look and flavor, all varieties contain vitamins and minerals that are effective in regulating blood sugar and blood pressure, maintaining healthy cholesterol levels and preventing cancer, cardiovascular disorders and stroke. Squash is low in fat and calories which makes it helpful for people with restrictive diets. Early Native Americans often ate squash raw, but today it is generally cooked before it is served. There is a wide assortment of recipes available that create squash casseroles that are aesthetically appealing and delicious to eat.

Some recipes are specific to one type of squash while others will work with any variety that the chef has on hand. Still others call for more than one kind to be blended together for added taste. Squash can be cut in rounds or sliced lengthwise depending on the type of casserole. Longer slices often work best with casseroles that call for layering ingredients in the pan. Round cuts of squash can be placed on top of the casserole to create an attractive design.
