Cajun Squash Casserole

Layers of yellow squash, tomatoes, white onion and green bell pepper seasoned with Cajun seasoning and topped with sauté prepared from melted butter, all-purpose flour, milk, Tabasco sauce, Cajun seasoning, and fresh Parmesan cheese. Casserole is topped with grated fresh Parmesan cheese and baked in hot oven until vegetables are tender and sauce is bubbling.

Ingredients -

1/2 stick Butter
4 Yellow Squash, thinly sliced
4 medium Tomatoes, cut in pieces
1/2 Green Bell Pepper, chopped
1 large White or Yellow Onion, thinly sliced

White Sauce:
4 tablespoons melted Butter
4 tablespoons All-Purpose Flour
1 cup Milk
dash of Tabasco Sauce
Cajun Seasoning
1/2 cup grated Fresh Parmesan Cheese

 
Preparation:

White Sauce:

Add 4 tablespoons melted butter, all-purpose flour, milk, Tabasco sauce, Cajun seasoning, and fresh Parmesan to small bowl.

Casserole:

1. Heat butter in large non-stick oven-safe skillet.

2. Add squash, tomatoes, onions, and peppers to skillet in 3 layers.

3. Season each layer with Cajun seasoning.

4. Cover and simmer over medium heat 10 minutes. Drain juice off and reserve for soup stock, if desired.

5. Pour white sauce over casserole. Sprinkle with cheese.

6. Bake 20 minutes.

Bell Pepper
Green, red, yellow, orange and purple bell peppers can be found in supermarkets, farmers markets and specialty produce stores. The green and red varieties are the most readily available. The peppers vary in size, have thick skins and are sweet tasting. Bell pepper are loaded with vitamin A and vitamin C. They can be eaten raw, and hold up well when cooked.

Summer Squash
Yellow squash are members of the summer squash family that includes a green variety and zucchini. Summer squash should be firm without blemishes or soft spots. Store summer squash in the refrigerator and use within 5 to 7 days.
