Squash Casserole

 

Ingredients -
2 cups Chopped Yellow Squash
3 cups Crumbled Prepared Cornbread
1/2 cup Chopped Onion
1/2 cup Chopped Celery
1 tablespoon White Sugar
1 Large Egg
1/2 (26 ounces) can Condensed Cream of Chicken Soup
1/2 cup Margarine, softened
1 cup Shredded Cheddar Cheese, divided
1 teaspoon Dried Sage
1/2 teaspoon Coarse Salt
1 pinch Ground Black Pepper
 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray a medium baking dish with nonstick cooking spray and lightly dust with flour.

3. Add the squash to a pot with just enough water to cover.

4. Bring the pot to a boil, and cook until tender, which takes about 5 minutes.

5. Drain.

6. Combine the squash, next 7 ingredients and 1/2 cup of cheese in a large bowl.

7. Season with salt, pepper and sage.

8. Transfer the mixture to the prepared baking dish.

9. Bake for 45 minutes.

10. Sprinkle the remaining cheese on top and cook for an additional 15 minutes or until the cheese melts.
