Sweet Potato Casserole

Mashed sweet potatoes combined with half-and-half, raisins, egg and brown sugar. Mixture is spooned into casserole dish and topped with crushed ginger snap cookies.

Ingredients -

1 container Mashed Sweet Potatoes
1/2 cup Raisins
1/4 cup Half and Half
1 Egg, beaten
2 tablespoons packed Brown Sugar
1/2 cup crushed Ginger Snap Cookies
2 tablespoons Butter or Margarine, melted

 
Preparation:

1. Preheat oven to 375 F.

2. Add mashed sweet potatoes, raisins, half-and-half, egg and brown sugar to mixing bowl.

3. Spoon sweet potato mixture into shallow casserole dish. Set aside.

4. Combine crushed cookies, and butter in small bowl.

5. Sprinkle crumbs over sweet potato mixture.

6. Bake 30 minutes.

7. Let stand 15 minutes before serving.

The half and half can be substituted. Use milk or heavy cream.
