Sweet Potato Casserole Topped with Brown Sugar and Pecans

Mashed sweet potatoes combined with eggs, granulated sugar, softened butter, milk and vanilla extract. Mixture is spread evenly into prepared dish. Sweet potatoes are topped with mixture of brown sugar, all-purpose flour, softened butter, and chopped pecans. Casserole is baked in hot oven until topping has browned and casserole has firmed.

Ingredients -

2 Large Eggs
1 cup Granulated Sugar
3/4 cup Butter, softened
1/2 cup Whole Milk
1 teaspoon Pure Vanilla Extract
3 cups Cooked Mashed Sweet Potatoes

Topping:
1/2 cup Brown Sugar
1/3 cup All-Purpose Flour
2 tablespoons Unsalted Butter, softened
1/2 cup Chopped Pecans

 
Preparation:

1. Preheat oven to 350 F.

2. Crack eggs into medium mixing bowl.

3. Stir in granulated sugar and softened butter to combine.

4. Pour in milk and vanilla.

5. Add mashed sweet potatoes and stir until mixture is well blended.

6. Grease a 2-quart casserole or baking dish. Spoon mixture into prepared casserole and spread evenly.

Topping:

1. Add brown sugar, all-purpose flour, softened butter, and chopped pecans to small bowl. Stir with fork until crumbly.

2. Spoon the pecan mixture evenly over casserole.

3. Bake casserole in preheated oven 350 F. for 45 minutes.
