Sweet Potato Casserole with Apple, Cinnamon, Marshmallows, and Toasted Pecans

Apple slices combined with toasted pecans, brown sugar, and ground cinnamon. Mixture is layered with cooked sweet potatoes in a prepared dish. Casserole is baked until apples are tender, topped with miniature marshmallows and returned to oven to finish cooking.

Ingredients -

2 medium Baking Apples, sliced
1/3 cup chopped Toasted Pecans
1/2 cup firmly packed Brown Sugar
1/2 teaspoon Ground Cinnamon
1 pound Sweet Potatoes, cooked
1/4 cup Unsalted Butter
2 cups Miniature Marshmallows

 
Preparation:

1. Preheat the oven to 350 F.

2. Add apple slices to large bowl. Stir in toasted pecans, brown sugar, and ground cinnamon.

3. Layer the apple mixture with sweet potatoes in a small, 1-1/2 quart casserole dish, and dot with butter.

4. Cover with foil.

5. Bake in preheated oven for 35-40 minutes.

6. Top the casserole evenly with miniature marshmallows.

7. Place under broiler until lightly browned.
