Sweet Potato Casserole with Brown Sugar and Pecans

 

Ingredients -

1 (40 ounces) can Sweet Potatoes, drained
1 cup Granulated Sugar
2 Large Eggs
1/3 cup Whole Milk
1 teaspoon Pure Vanilla Extract
1 cup Packed Brown Sugar
1 cup Chopped Pecans
1/3 cup All-Purpose Flour
2/3 cup Melted Butter

 
Preparation:

1. Turn the oven to 350 degrees and preheat.

2. Spray a 2 quart casserole baking dish with nonstick cooking spray.

3. Place the sweet potatoes in a microwave safe dish and heat to hot.

4. Drain and mash with a fork.

5. Add the sugar, eggs, 1/3 cup melted butter, vanilla and milk and mix well.

6. Transfer the mixture to the prepared casserole dish.

7. Combine the remaining ingredients in a separate bowl and mix well.

8. Sprinkle the mixture over the top of the sweet potatoes.

9. Bake for 35 minutes or until a toothpick inserted into the center of the casserole dish comes out clean.
