Sweet Potato Casserole with Pralines, Pecans, and Raisins

Cooked sweet potatoes are combined with pure cane syrup, sweetened condensed milk, unsalted butter, brown sugar, orange juice, the zest and juice of a fresh lemon, ground cinnamon, granulated sugar, ground nutmeg, raisins, chopped pecans and praline pieces. Casserole is baked until golden brown on top.

Ingredients -

6 pounds Sweet Potatoes, cooked
1 tablespoon Pure Cane Syrup
1/3 cup Sweetened Condensed Milk
1 pound Unsalted Butter, softened
2 tablespoons Brown Sugar
1/2 cup Fresh Orange Juice
Zest from 1 Fresh Lemon
Juice from 1 Fresh Lemon
1/2 teaspoon Ground Cinnamon
1/2 teaspoon Granulated Sugar
1 pinch Ground Nutmeg
1 cup Raisins
2 cups chopped Pecans
8 whole Pralines, broken into pieces

 
Preparation:

1. Preheat the oven to 350 degrees F.

2. Add the cooked, peeled potatoes to large mixing bowl.

3. Stir in pure cane syrup, sweetened condensed milk, softened butter, and brown sugar.

4. Stir by hand or with electric mixer.

5. Stir in the fresh orange juice, lemon zest, and fresh lemon juice.

6. Stir or mix until well blended and potato mixture is smooth.

7. Fold in the ground cinnamon, granulated sugar, raisins, chopped pecans and praline pieces.

8. Spoon the mixture into glass or ceramic casserole or baking dish.

9. Bake at 350 degrees F. for approximately 18 to 20 minutes.

Sweet potatoes will keep for a week or so when stored in a cool, dry, ventilated location, like a bowl on the countertop. Do not store sweet potatoes in the refrigerator as they will become soft and moldy.
