1. Turn the oven to 350 degrees and preheat.
2. Add the salt pork to a skillet over medium heat and cook for 5 minutes, or until crispy.
3. Add the carrot and onion and cook for 5 minutes, or until softened.
4. Add the wine, butter, lima beans, salt and pepper and stir well.
5. Spray a 9 x 9 inch baking dish with nonstick cooking spray.
6. Transfer the pork mixture into the prepared dish.
7. Cover and bake for 30 minutes, or until the lima beans are tender.
